Hungarian goulash, or "gulyás" in Hungarian, go back to the 9th century when Hungarian shepherds, referred to as "gulyás," readied the food in sizable cauldrons over open fires. In the beginning, it was actually a straightforward meat soup, yet with time, it evolved right into the robust, paprika-spiced stew we understand today.
