The aim of this study was to evaluate the oxidative stability and sensory quality of dry-cured rabbit legs produced with a reduction or replacement of 50% of NaCl by KCl and with the addition of monosodium glutamate (MG). Oxidative stability was evaluated during 90 days of storage at 20 °C by determining pH, redox potential (Eh), and TBARS while overall liking and sensory profile were measured at the beginning of storage. The results indicated that oxidative stability of the dry-cured rabbit legs was not affected by the sodium reformulation. However, TBARS values increased about 15-fold during storage in all treatments. Dry-cured rabbit legs produced with KCl showed lower scores (P less then 0.05) for the overall liking and flavor attributes as "astringent flavor", "bitter taste" and "metallic flavor". The addition of MG to products with 50% NaCl reduction provided a liking and a sensory profile similar to the product with 100% NaCl.Micro-computer tomography imaging is a fast and non-destructive data acquisition technique which can replace or complement the traditional investigation methodologies used in entomology to study morphology. In this paper, Synchrotron Radiation X-ray Phase-Contrast micro tomography (SR-PhC micro-CT) was combined with histology and scanning electron microscopy (SEM) observations to describe the abdominal organs of Pterostichus melas italicus Dejean, 1828 (Coleoptera, Carabidae). This species was used as a representative model because of its ecological role as a generalist predator in agroecosystems. SR-PhC micro-CT allowed us to identify in situ abdominal structures including dorsal vessel, digestive tract with Malpighian tubules, male reproductive system, ganglia, fat bodies, pygidial glands, muscles and tracheae. The histology was performed to define the tissue organization of the digestive and reproductive systems. SR-PhC micro-CT and 3D rendering provided more accurate information on shape and size of organs than histological and SEM analyses, respectively. The finding of this study was to describe the anatomy and histology of organs involved in crucial life history traits, such as reproduction, nutrition and excretion. High quality images and the supplementary video represent a significant advance in knowledge of the carabid anatomy and are a baseline for future research.Pu-erh tea is a post-fermentation tea with unique flavor and multiple health benefits. Due to the various microorganisms involved in the post-fermentation process, Pu-erh tea contains highly complex components, which have rich interactions with the gut microbiomes (GMs). Because the structure and homeostasis of GMs are closely related to human wellness and the various diseases progress, the beneficial effects of Pu-erh tea on GMs have a great potential for application in health care. However, there is no systematic summary of the bioactive components of Pu-erh tea, and their effects on the GMs. Here, we review the current studies on the effects of Pu-erh tea and its bioactive components on the structure of GMs as well as on health improvement, and further discuss the relevant quality indicators. This "components - function - indicators" clue will hopefully stimulate the standardization of Pu-erh tea fermentation process and the development of its functional products.This study aimed to investigate the effect of wheat bran micronization on its functionality including physicochemical and antioxidant properties, and dough properties. Coarse bran (D50 = 362.3 ± 20.5 μm) was superfine ground to medium (D50 = 60.4 ± 10.1 μm) and superfine (D50 = 11.3 ± 2.6 μm) bran, accompanied with increasing specific surface area and breakdown of aleurone layers.
