Effectiveness of liposomes elaborated with rapeseed phospholipid (RP) extracted from a residue of oil processing, stigmasterol (ST) and/or hydrogenated phosphatidylcholine (HPC) for the encapsulation lactoferrin (LF) was studied; lipid membrane of liposomes was characterized (bilayer size, chain conformational order, lateral packing, lipid phase, and morphology) and the protection offered to the encapsulated LF during in vitro digestion was determined. Liposomes composed of RP+STLC(low concentration) showed spherical and irregular vesicles without perforations. Lamellar structure was organized in a liquid-ordered phase with a potential orthorhombic packing. Stability and size of the liposomes were more affected by gastric digestion than intestinal digestion; 67-80% of the initially encapsulated LF remained intact after gastric digestion whereas the percentage was reduced to 16-35% after intestinal digestion. Our results shows that liposomes elaborated with RP, properly combined with other lipids, can be a useful oral delivery system of molecules sensitive to digestive enzymes. Sample preparation methodsforcereal digestion were evaluated for the first time for subsequent As, Cd, Hg, and Pb determination by atomic absorption spectroscopy techniques. Microwave-assisted digestion (MW-AD) under high and medium pressure and microwave-induced combustion (MIC) were evaluated. The use of MIC made it possible to digest 700 mg of samples, and agreements of 97, 96, 100 and 92% were obtained for As, Cd, Hg and Pb, respectively, when 7 mol L-1 HNO3 was used as the absorbing solution. RK 24466 It was not necessary to dilute the digests obtained to avoid interferences in the quantification of As, Cd, Hg, and Pb. Although high pressure MW-AD was efficient for cereal digestion, interferences were observed on analyte determination. Peptides and free amino acids are naturally generated in dry-cured ham as a consequence of proteolysis phenomenon exerted by muscle peptidases. The generation of bioactive peptides in different types of dry-cured ham produced in Spain, Italy and China is reviewed in this manuscript. Major muscle proteins are extensively hydrolysed firstly by endogenous endo-peptidases followed by the successive action of exo-peptidases, mainly, tri- and di-peptidylpeptidases, aminopeptidases and carboxypeptidases. Such proteolysis is very intense and consists of the generation of large amounts of free amino acids and a good number of peptides with different sequences and lengths, some of them exerting relevant bioactivities like angiotensin converting enzyme inhibitory activity, antioxidant activity, di-peptidylpeptidase IV inhibitory activity among other and in vivo antihypertensive, hypoglycemic or anti-inflammatory activity. This manuscript reviews the recent findings showing that dry-cured ham constitutes a good source of natural bioactive peptides that have potential benefit for human health. We investigated the potential of front-face synchronous fluorescence spectroscopy (△λ = 75 nm) to non-destructively evaluate beef freshness and quality decline during chilled storage. The total volatile basic nitrogen (TVB-N), thiobarbituric acid reactive substances (TBARS) and total viable count (TVC) values were used as standard freshness indicators. The fluorescent substances, including amino acids, collagen and conjugated Schiff bases, were highly correlated with the chemical and microbial deterioration of the beef. Quantitative models for simultaneously predicting the three freshness indicators were built combined with partial least squares (PLS) algorithm and showed good reliability. For TVB-N and TBARS values, Rc2 and Rp2 were both above 0.900, and for TVC values Rc2 and Rp2 were 0.912 and 0.871, respectively. The qualitative model established by partial least squares discriminant analysis (PLS-DA) algorithm could accurately classify beef samples as fresh, acceptable or spoiled. The accuracy of the calibration and validation sets were 92.54% and 86.96%, respectively. Sufu is a traditional fermented soybean curd, and Guilin Huaqiao white sufu is one of the most famous mould-fermented white sufu in China. The volatile compounds in sufu were extracted by vacuum simultaneous steam distillation and extraction (V-SDE) and analysed by gas chromatography-mass spectrometry-olfactometry (GC-MS-O). The aroma-active compounds were identified by aroma extract dilution analysis (AEDA) and odour activity values (OAVs), and their influence on umami aftertaste and palatability of umami solution was identified by sensory evaluation analysis in the follow-up research. A total of 88 volatile compounds, contained 20 aroma-active compounds were identified, of which (E,E)-2,4-decadienal, 1-octen-3-ol, (E,E)-2,4-nonadienal, eugenol, ethyl hexanoate and phenylacetaldehyde were not only the aroma-active compounds in Guilin Huaqiao white sufu, but also played an important role in enhancing the umami aftertaste and palatability of umami solution because of the congruency of the aroma and umami taste. Worldwide, health services are interested in supporting the speedy adoption of research findings into practice. To promote the translation of research into practice, a university in the South of England along with a partner NHS Trust piloted a new role - Translation Fellow (TF). This article describes and analyses the experience of implementing this role. It outlines the successes achieved as a result of this partnership between a university and a healthcare organisation as well as describing the challenges involved in establishing such a role. The successes included submitting a joint abstract to a conference; collaboratively developing articles for publication; organizing a visit overseas to compare similar services; co-designing a database to assist in collecting data for service planning and research, and setting up a 'one click access' web space populated with evidence informed material to support the work of the clinical staff. The pilot acted as a proof of concept in which the TF role demonstrated its potential.
