This study is aimed to develop a novel edible coating based on Plantago major seed mucilage (PMSM) and Citrus limon essential oil (CLEO) to increase the shelf-life of buffalo meat during cold storage. The CLEO was firstly isolated by the hydrodistillation method, and it contained mainly limonene (40.5%) and carene (15.4%) with remarkable antioxidant activity (55.7%, 63.8%, and 51.85% based on the DPPH-radical scavenging, ABTS-radical scavenging, and carotene-linoleic acid bleaching tests, respectively) and antibacterial effect against some pathogenic and spoilage microorganisms. The CLEO (0%, 0.5%, 1%, 1.5%, and 2%) was then incorporated into PMSM solution to develop a novel CLEO-loaded PMSM edible coating for improving the shelf-life of buffalo meat. The edible coating was able to significantly reduce the progression of lipid oxidation (peroxide value) and microbial growth (total viable count, psychrotrophic bacteria, Escherichia coli, Staphylococcus aureus, and fungi) in buffalo meat during storage period of 10 days at 4°C in comparison with the control (noncoated sample). The meat hardness and sensory properties (i.e., odor, color, appearance, texture, and overall acceptability) were also maintained better upon edible coating applications. Based on the results, the CLEO-rich PMSM edible coating could be applied as a new and effective preservative to improve the stability of meat products to lipid oxidation and microbial spoilage.Rice is the staple cereal in Senegal. Despite the many policies implemented over the last decade, Senegalese consumers still prefer imported over local rice. To understand this preference, this study compares consumer acceptability of three local rice samples versus two imported rice samples. selleck chemicals Two focus groups and a consumer test with 120 women were carried out in the city of Saint-Louis in Senegal. The results concerning consumption habits showed that about 85% of the surveyed women consume rice at least once a day (at lunch). The hedonic test showed that consumers appreciated all five rice samples, but the most liked samples were obtained from industrial processing of either local or imported whole and fragrant rice. The least liked sample was a local semi-industrial rice, including 50% broken grains. The results of the just-about-right (JAR) test and check-all-that-apply (CATA) test showed that the sensory descriptors such as white color, well-cooked, and homogeneous grain size had an influence on the consumers' choice of rice samples. However, the most important selection criteria were the homogeneous size of the rice grains, the absence of impurities, both of which are directly linked to the milling conditions, and fragrance, which is related to the variety. The origin of the rice samples did not influence the consumers' choice. Mitochondrial dysfunction is closely associated with the occurrence and development of obesity. However, it is unclear if there are differences in mitochondrial redox homeostasis and energy metabolism between obesity-prone (OP) and obesity-resistant (OR) individuals and if these differences account for the different susceptibilities to developing obesity. The present study aimed to compare the regulation of energy metabolism between OP and OR rats during high-fat diet (HFD)-induced oxidative stress. Male Sprague Dawley rats were randomly divided into the control group and the HFD group. The HFD group was further divided into the OP and OR groups based on body weight gain (upper 1/3 for OP; lower 1/3 for OR) after eight weeks on HFD. Rats were sacrificed at the 8th and 20th week, and serum and organs were collected. At 8 weeks, HFD decreased mitochondrial antioxidant enzyme activity and increased the production of ROS in the OP rats, which was accompanied by unusual mitochondrial oxidative phosphorylation, reduced mitochondrial membrane potential (MMP), and decreased ATP production. When the feeding period was extended beyond the 8 weeks, the energy expenditure of the OP rats reduced further, resulting in elevated blood lipids and glucose levels and increased body weight. In contrast, the OR rats had higher mitochondrial antioxidant enzyme activity and normal redox homeostasis throughout the period, which was beneficial in energy utilization and ATP production. Thus, the increase in energy expenditure in the OR rats reduced the HFD-induced weight gain. Mitochondrial function and antioxidant defense might be involved in the different propensities for developing obesity. In this study, the protective effects of two peptides from seahorse hydrolysates (SHP-1 and SHP-2) against ethanol-mediated oxidative stress in HepG2/CYP2E1 cells were investigated. Firstly, SHP-1 and SHP-2 presented no cytotoxicity. Compared with the ethanol-treated groups, SHP-1 and SHP-2 increased cell viability in a concentration-dependent manner. Secondly, SHP-1 and SHP-2 markedly reduced intracellular reactive oxygen species (ROS) generation, gamma-glutamyltranspeptidase (GGT) activity, and tumor necrosis factor-α (TNF-α) levels and remarkably enhanced superoxide dismutase (SOD) and glutathione (GSH) activities. SHP-1 and SHP-2 also down-regulated the expressions of GGT, bax, c-caspase-8/-9/-3, p-Akt, p-IκB-α, p-p65, p-ERK, and p-p38 but up-regulated SOD, GSH, NF-E2-related factor 2 (Nrf2), heme oxygenase-1 (HO-1), and bcl-2 levels, as revealed by Western blot analysis. Moreover, SHP-1 and SHP-2 increased the mitochondrial membrane potential (MMP), reduced DNA damage, and suppressed the nuclear translocation of p65. These results suggest that two peptides from seahorse hydrolysates can be considered a potential functional biomaterial and further improve the use value of seahorse in aquaculture.
