This work aimed to study long-term impact of micro-oxygenation and/or different aging treatments (i) high SO2, (ii) high Fe with Cu and (iii) gelatin fining on Plavac mali red wine phenolic and in-mouthfeel sensory development in barrels and furthermore in bottles. Results showed that outcomes of micro-oxygenation strongly depend on aging treatments. High SO2 concentration during aging in barrels and bottles delayed typical phenolic changes and slightly contributed to astringency and lower color intensity, particularly in wine that was not micro-oxygenated. High metal concentrations and gelatin fining promoted intensive polymerization of proanthocyanins and a lower percentage of prodelphinidins after long-term aging in barrels. Also, flavan-3-ol and anthocyanins transformation rates in micro-oxygenated wines of both treatments significantly differed from their controls. Gelatin fining proved to be a very effective treatment for astringency reduction, particularly when combined with micro-oxygenation, but fined wines after long term aging in bottles showed lower color intensity.The formation of fungal colonies, mycotoxins, phenolic compounds, cooking quality and color properties were evaluated in freshly-harvested brown, black, and red rice grains and then subjected to ultraviolet radiation (UV-C) for 1 and 3 h. Assessments were made after 6 months of storage. The exposure of black and red rice at 1 h of UV-C was enough to decrease the presence of fungal colonies by 22% and 79%, respectively, without any changes in cooking and coloring properties. In brown rice, only 3 h of UV-C irradiation was able to reduce the formation of fungal colonies. The release of phenolic compounds associated with cell wall was observed only in black and red rice subjected to UV-C radiation. The levels of mycotoxins gradually decreased with the increase in the time of exposure to UV-C radiation, demonstrating UV-C irradiation to be an effective method in fungal control and reduction of mycotoxins in stored rice.The present study was conducted to evaluate effect of ethephon and acetylene treatments on phenolics, flavonoids and antioxidant activity of banana flesh and their bioaccessibility. Total phenolics, flavonoids and antioxidant activity (DPPH, ABTS, FRAP) were measured at different phases of simulated gastrointestinal digestion of banana treated with 1000 ppm ethephon and 1000 ppm acetylene against natural ripening. The results revealed that inducing ripening lowers the content of phenolics, flavonoids and antioxidant activity considerably in the fresh fruit. Bioavailability of phenolics, flavonoids and FRAP activity were increased significantly (p less then 0.05) after gastric digestion regardless of the treatment. The release of polyphenols and flavonoids during gastric digestion in treated banana was more significant than in naturally ripened banana. Recovery of polyphenols after dialysis was significantly high in naturally ripened banana. The lung tissues of the animals were analysed by a new designed specific pan-Pneumocystis mtLSU rRNA gene PCR and sequencing. With this PCR, detection and discrimination of all known Pneumocystis spp. in a single step should be possible. This first detection of Pneumocystis spp. in 29/62 (46.8%) red foxes and 29/37 (78.4%) raccoon dogs indicated, that they harbour two dissimilar strains, as seen by specific single nucleotide position changes (SNPs). Nevertheless, five samples with contrary SNPs showed a probable inter-species transmission.In this work, steam explosion (STEX), microwave assisted extraction (MAE) and high voltage electrical discharges (HVED) pretreatments have been evaluated for their impact on the physicochemical characteristics of extracted hemicellulosic polymers and on the resulting hemicellulose-based films. Extraction was carried out on spruce sawdust pre-soaked in water (WPS) or 1 M NaOH solution (SPS). The results have shown that STEX pretreatment gave the highest hemicellulose yields (64 and 66 mg g-1 of dry wood from WPS and SPS respectively) followed by MAE and HVED whilst MAE pretreatment produced the highest molecular mass (Mw~66 kDa of arabinoglucoronoxylans from SPS and 56 kDa for galactoglucomannans from WPS). A relatively high acetylation degree was found for STEX WPS (acetylation degree ≈ 0.35) and a high lignin content for STEX SPS (≈12%). Films have been produced by casting using sorbitol as plasticizer. Low oxygen barrier and light transmittance properties were observed for the films obtained from hemicelluloses extracted from SPS due to their high molecular mass and to intermolecular bonding of hemicelluloses and lignin.
