3%; sensitivity, 86.5%; accuracy, 89.2%; uncertainty, 0.3; limit of detection (LOD), 1 larva; and limit of quantification (LOQ), 3 larvae.The objectives of the study on a continuous flow hot air dryer combined with radio frequency heating at different temperatures (HA/RF) (38 °C, 42 °C, 46 °C, and 50 °C) in a large-scale process compared with conventional continuous flow hot air drying (HA) were (1) to investigate the drying characteristics, drying kinetics, and milling quality of the process and (2) to observe the cooking quality and compare the sensory differences of the cooked rice after treatment. The drying characteristics and moisture diffusivity showed that the higher the radio frequency (RF) heating temperature, the shorter the drying time. The specific energy consumption and energy cost decreased when the RF heating temperature increased. The optimal condition in terms of fissure percentage was HA/RF42. In addition, there were no significant differences in head rice yield and white rice color determination, amylose content, texture profiles, and pasting properties in all HA/RF treatments. In the triangle test, it was found that at least 6% of the population could perceive a difference between HA and HA/RF50. In conclusion, this study proposes the further development of the HA/RF drying process at low-temperature profiles and shows the great potential of RF technology for commercial drying in rice industry.Saeu-jeotgal, a Korean fermented shrimp food, is commonly used as an ingredient for making kimchi and other side dishes. Therefore, these findings suggest that the S. saprophyticus isolated from the saeu-jeotgal utilizes different molecular strategies for halotolerance, with glutamate as the key molecule.We explore the feasibility of the long-term transportation of live large yellow croakers (Pseudosciaena crocea) using the combined method of CO2 anesthesia and hypothermia hibernation, and its effect on the quality of recovered fish stored at 4 °C. Fish treated with CO2 anesthesia at a 2 ppm/s aeration rate were cooled at 3 °C/h to hibernate survived for 36 h at 8 °C in seawater. This method resulted in better survival rates and time, and a lower operational time than hypothermia hibernation or CO2 anesthesia methods. The results of a blood analysis indicated that the stress experienced by the fish during hibernation was mitigated, but existent after recovery. The drip loss rate of the ordinary muscle of hibernated fish was significantly different from that of the control group at 4 °C, but there was no significant difference in the pH, lactic acid content, and color during early storage. To this end, the viability of probiotic L. rhamnosus GG strain and the rheological properties and quality parameters of kefir beverages were tested during storage over 21 days at 4 °C. The final LGG counts were 7.71 and 7.55 log cfu/mL in natural kefir starter culture and kefir grain, respectively. Overall, the results indicate that natural kefir starter culture could be a potential probiotic carrier.Packaging technology is evolving, and the objectives of this study were to evaluate instrumental surface color, expert color evaluation, and lipid oxidation (TBARS) on beef longissimus lumborum steaks packaged in vacuum-ready packaging (VRF) or polyvinyl chloride (PVC) overwrap packaging. Paired strip loins (Institutional Meat Purchasing Specifications # 180) were cut into 2.54-cm-thick steaks and assigned randomly to one of two packaging treatments, VRF or PVC. Steaks packaged in VRF were lighter in color (p less then 0.05) as the display period increased, whereas steaks packaged in PVC became darker (p less then 0.05). Redness (a*) values were greater (p less then 0.05) for PVC steaks until day 5, whereas VRF steaks had a greater (p less then 0.05) surface redness from day 10 to 35 of the display period. Calculated spectral values of red to brown were greater (p less then 0.05) for steaks in VRF than PVC. In addition, expert color evaluators confirmed VRF steaks were less brown and less discolored (p less then 0.05) from day 5 to 35 of the display. Nonetheless, lipid oxidation was greater (p less then 0.05) for PVC steaks from day 10 through day 35 of the display. Results from this study suggest that the use of vacuum packaging for beef steaks is plausible for maintaining surface color characteristics during extended display periods.A quick, simple, and reliable isocratic ultra-performance supercritical fluid chromatography-photodiode array detector (UPSFC-DAD) method was developed and validated to determine lycopene in different horticultural products. The effects of stationary phase, co-solvent, pressure, temperature, flow rate, and mobile phase additive on the separation of lycopene were evaluated. The developed method involved BEH-2EP-2.1 × 150 mm, 5 µm as the stationary phase, and CO2/MeOH 8515 (v/v) with formic acid as the additive at 0.10% as the mobile phase. The column temperature was maintained at 45 °C, ABPR at 1800 psi, and the mobile phase's flow rate was maintained at 1 mL/min. Under the optimized conditions, lycopene was successfully separated within 0.722 ± 0.001 min. The standard curve assayed over a range of 10 to 100 µg/mL resulted in a correlation coefficient of 0.998. The mean recoveries between 97.38% and 102.67% at different spiking levels with RSD less then 2.5% were achieved. The intra and inter-day precision expressed as relative standard deviations (RSD) were found to range from 1.27% to 3.28% and from 1.57% to 4.18%, respectively. Robustness in terms of retention time (tR) and RSD were found to be 0.93 ± 0.23 min and less less then 2.80%, respectively. The limits of detection and quantification were 0.14 µg/mL and 0.37 µg/mL, respectively. A proper combination of temperature and time parameters in sous vide processing plays an important role in the water-holding capacity, texture properties, and juiciness of the meat. The present study aimed to assess the impact of the one-step and two-step sous vide processing on different quality properties of chicken breast with special emphasis on the cooking loss, color, texture properties, protein solubility, and lipid oxidation. According to the results, chicken breast treated with a two-step temperature (50 and 60 °C) showed improved texture parameters (shear force, hardness, chewiness, and gumminess), lower cooking loss, acceptable redness values, and decreased lipid oxidation levels than the chicken breast treated with the one-step temperature of 60 °C. Moreover, the two-step sous vide technique revealed significantly higher total protein solubility of the chicken breast than the one-step sous vide. Based on pasteurization values, the two-step sous vide technique was equally safe as the one-step sous vide technique for vegetative cells' inactivation for the main pathogens of interest (C. perfringens and L. monocytogenes).This study used 1076 crossbred steers to evaluate the effects of calf-fed and yearling-fed beef production systems, implant strategies (with and without implants), and their interactions on the primal tissue composition (lean and fat components) of individual primal cuts using complete carcass dissection data. The results indicate that production system × implant interactions affected loin and rib primal weight percentages as well as marbling (p 0.05). Implants increased lean and decreased fat tissue contents of primal cut; however, the production system only affected lean content in the loin (p less then 0.05) and fat content in the loin, round, and rib (p less then 0.05). Redundancy analysis revealed a strong association between Angus breed percentage and marbling, as well as between Simmental breed percentage and multiple primal lean traits. Response surface regression models explained less variability in the tissue composition traits in calf-fed compared with yearling-fed animals, suggesting the need for further exploration using genomic studies.The acceleration on the extraction by the sonication of phenolic compounds (measured as the Total Phenolic Index) from wood chips by wine distillates is studied in the present paper. Using the Arrhenius equation, the theoretical temperature at which the kinetics obtained by these sonicated extraction processes are equal to the kinetics of non-sonicated and thermally accelerated extractions, was calculated. By applying a pseudo-second order kinetic model, it was shown that the initial rate values obtained from the sonicated extractions were as high as those obtained from the thermal extractions carried out at a temperature at least 2.5 °C higher than the real temperature at which the experiment was performed. Higher power densities lead to higher initial rates of extraction, although very high power densities decrease the amount of phenols in equilibrium, probably due to the degradation processes. Additionally, the positive synergy between the sonication and the movement of the recirculated distillate through wood chips was also stablished, obtaining a difference of temperature of at least,18.2 °C for the initial extraction rate and 7.0 °C for the equilibrium.
