The aim of this study was to analyze the effects of Salvia hispanica L. (chia) seed upon metabolic pathways that play a key role in adipose tissue lipid handling which could be involved in visceral adiposity reduction developed in rats fed a sucrose-rich diet (SRD). INCB024360 Male Wistar rats were fed with a reference diet (RD) -6 months- or SRD-3 months. Then, the last group was randomly divided into two subgroups. One subgroup continued receiving the SRD up to 6 months and the other was fed with a SRD where whole chia seed was incorporated as the source of dietary fat for the next 3 months (SRD + CHIA). Results showed that chia seed in the SRD-fed rat reduced the abdominal and thoracic circumferences, carcass fat content, adipose tissue weights, and visceral adiposity index. This was accompanied by an improvement in insulin sensitivity and plasma lipid profile. In epididymal adipose tissue, the decreased fat cell triglyceride content was associated with a reduction in both, FAT/CD 36 plasma membrane levels and the fat synthesis enzyme activities. There were not changes in oxidative CPT enzyme activities. PKCβ and the precursor and mature forms of SREBP-1 protein levels were decreased, while pAMPK was increased. Our findings suggest that chia seed supplementation can modulate essential pathways of lipid metabolism in adipose tissue, contributing to reduced visceral fat accumulation in SRD-fed rats.The commercial kiwifruit juice is deficient in a theoretical basis for the control of aroma characteristics during sterilization. To investigate the different sterilization methods on the aroma of kiwifruit juice, three sterilized kiwifruit juice samples, including pasteurization (PS), high temperature short time (HTST) and high hydrostatic pressure (HHP) sterilization, were observed. Results showed that a total of 15 major aroma-active compounds were identified in fresh kiwifruit juice by combination of detection frequency (DF) analysis and odor activity value (OAV); while the changes of these aroma-active compounds during PS, HTST and HHP sterilization were further studied. Quantitative descriptive analysis (QDA) was applied to validate the sensory differences, showing fruity and grassy notes changed a lot after sterilization, and the HHP sample was similar to fresh sample (FS) in comparison of samples treated by other sterilization methods. Further partial least squares regression analysis (PLSR) coincided with the overall note. Among these aroma-active compounds, the decrease of C6 aldehydes and C6 alcohols such as hexanal, (E)-2-hexenal and 1-hexanol might result in the great change of grassy note while the change of fruity note might be well correlated with the decrease of esters such as methyl butyrate and ethyl butyrate during processing.Deoxynivalenol (DON), a common mycotoxin, usually induces oxidative stress and intestinal injury of humans and animals. This study aims to investigate the protective effect of Gly-Pro-Ala (GPA) peptide, isolated from fish skin gelatin hydrolysate fraction 3 (FGSHF3), on alleviating the toxicity and oxidative stress induced by DON in the mice and IPEC-J2 cells. DON treatment decreases average daily gain and feeds intake, which causes enlargement of the liver and spleen. FGSHF3 (200 mg/kg) and GPA (200 mg/kg) treatment significantly increase average daily gain and inhibits enlargement of the liver and spleen. Furthermore, FGSHF3 and GPA treatment significantly alleviates intestinal injury and maintains tight junction in mice and IPEC-J2 cells. FGSHF3 and GPA treatment significantly inhibits ROS and MDA production and enhances antioxidant enzyme activity, such as CAT, SOD-1, GCLM, GCLC, and GSH-PX. Furthermore, FGSHF3 and GPA treatment promote Nrf2 migration from the cytoplasm to the nucleus, resulting in exerting antioxidant effects. And its effects are abolished after Nrf2 is knockdown by siRNA. Overall, our results suggest GPA peptide may be a promising candidate for the alleviation of DON-induced toxicity in humans and animals.Different carriers, such as the combination of sodium alginate and inulin, have been employed to protect foods against environmental effects. The goal of this work was to use the ionic gelation encapsulation process to produce microparticles containing Clidemia rubra extract, ranging the concentration of inulin from 1.5 to 3.5 g inulin.100 g-1 of solution. Characteristic signals of sugars, organic acids and phenolic compounds were identified in the extract using the 1H NMR technique. The carriers containing inulin presented significant difference in the moisture content when compared to the pure sodium alginate beads. The produced beads were found in the range of 0.81-1.06 mm. The addition of inulin to sodium alginate was significant for the encapsulation efficiency (EE) of the antioxidant compounds when compared to the beads formed only using pure sodium alginate. The microspheres presenting inulin and sodium alginate presented higher content of spherical particles. The addition of 2.5 g inulin.100 g-1 of solution allowed its incorporation into the pores of the beads, favoring a possible chemical interaction between inulin and sodium alginate. This interaction resulted in a different crystal structure and better EE. Furthermore, beads containing inulin presented higher protection of the encapsulated bioactive compounds during the gastric phase.Resveratrol is a photosensitive, bioactive molecule which has received increasing research interest during the past decade for its antioxidant properties. However, it has low solubility in water or common triglyceride oils. Resveratrol solubilization in oil can only be achieved in essential oils, such as flavour oils, but the stability of emulsions produced with this type of oils is low as they are prone to creaming phenomena and Oswald ripening. In this study, resveratrol was first dissolved in orange oil which was mixed into a medium-chain triglyceride (Miglyol) at different ratios and used as the internal phase of oil-in-water emulsions (O/W). The emulsions were stabilized by octenyl succinic anhydride (OSA) modified rice starch granules using two different ratios of starch particleoil to study the influence of interfacial coverage on the final emulsion droplet size and emulsion stability. The results of this study indicated that stable Pickering emulsions could be prepared using OSA-modified rice starch granules even at partial coverage conditions.
