The present study used ultrasound waves with the intensity of zero, 30, and 70%, as well as the microwave-induced pre-gelatinization of corn flour and natural ones to produce gluten-free pan bread. To this end, the microstructure of pre-gelatinized corn flour was compared to the natural one. The result of the electron microscope image indicated the extension of structure and further swelling of the pre-gelatinized corn flour as compared to the natural one. In addition, the result represented that samples containing pre-gelatinized corn flour had a firmer dough, more moisture, porosity, specific volume, the L* component of the crust and crumb texture, the a* component of crumb texture and the sensory properties when compared to those which contained the native corn flour. Based on the results, pre-gelatinized corn flour caused a decrease in the b* component in the crust and crumb texture, along with firmness during 2 and 72 h after baking. On the other hand, the ultrasound waves resulted in a reduction in the dough and bread firmness and b* colorful component while those with 30% intensity increased the L* colorful component, specific volume, porosity, and the overall acceptability score in sensory assessment. In general, the sample containing pre-gelatinized corn flour, treated with 30% intensity of ultrasound waves demonstrated better technological, visual, and sensory properties and was considered as a superior sample in the present study. © Association of Food Scientists & Technologists (India) 2019.Effect of four different cultivars and salt pretreatment on drying of Amla (Emblica officinalis) gratings were studied. Quality attributes namely, ascorbic acid, total phenolic content, antioxidant activity and colour were evaluated for dried (using Cabinet tray dryer at 55 ± 2 °C for 8 h) and stored (refrigerated, ambient and accelerated condition) samples of four cultivars (Krishna, Kanchan, NA-7 and Chakaiya). Salt pretreated dried samples showed better retention of nutrients and colour as compared to untreated. Retention of ascorbic acid, total phenolic content and antioxidant activity (IC50 value) in pretreated dried samples were in the range of 79.51-84.89%, 176.5-220.3 mg GAE/g db and 9.48 to 17.74 mg/µl, respectively. Colour retention was also found to be better in salt pretreated samples. Ambient storage condition resulted in higher retention of ascorbic acid and colour compared to accelerated condition. Taking into consideration, the nutritional value of the fresh Amla, ability to retain nutritional value and color during drying and storage, NA-7 cultivar Amla (pretreated with 1% salt, tray dried at 55 °C for 8 h) is the most suitable for preparation of Amla powder. The method developed in the present work is devoid of blanching step and found to be effective in retaining the nutrients during drying and storage and can be employed also for drying of similar fruits and vegetables. © Association of Food Scientists & Technologists (India) 2019.The aim of study was evaluate the effect of using rice protein coating with different plasticizers types on the quality of eggs storaged at 20 °C for 6 weeks. Three hundred eggs were coated with rice protein at 8% solution combined with glycerol, propylene glycol or sorbitol. Uncoated eggs showed the highest weight loss (5.31%), while rice protein with glycerol (4.29%) propylene glycol (4.13%) and sorbitol (4.07%) solutions were effective in preventing weight lost. Uncoated eggs had the worst HU (58.40), albumen (9.52) and yolk (7.06) pH, and YI (0.33) after 6 weeks of storage. The eggs coated of rice protein with glycerol, propylene glycol and sorbitol presented results with similar intern quality between them during all the storage period. However, the use of sorbitol as a plasticizer in the coating is more efficient in maintaining control of the increase in albumen pH. Scanning electron microscopy demonstrated a lower surface porosity in coated eggshell, indicating that the use of the coating may provide a protective barrier against the transfer of gases and moisture. In conclusion, the best egg protection results in terms of egg quality are obtained in eggs coated with rice protein and sorbitol. © Association of Food Scientists & Technologists (India) 2019.The quantity and quality of complementary foods is one of the contributing factors to childhood under nutrition. Complementary food based on amaranth and sorghum grains was formulated. It was deemed to be superior nutritionally to the commonly used complementary foods in Kenya. Knowledge on storage and packaging is important for a long shelf life of the product to be achieved. Water activity and moisture content are key indicators of the stability of dried foods. To establish the proper storage conditions of the product, moisture sorption isotherms at 25 °C, 30 °C and 35 °C were determined over water activity range of 0.11-0.97 and data fitted with six sorption models. Water vapour permeability of common packaging materials was also determined at 25 °C and 35 °C and the data was used to predict the product's shelf life. The product exhibited type two sorption isotherm according to Brunner classification an indication of monolayer-multilayer sorption behavior. The critical storage moisture content of the complementary food corresponding to 0.6 water activity a point of microbiological stability was found to be 7.5%. Based on Heiss-Eichner model, a shelf life of 1423 days at 25 °C can be achieved with product initial moisture content of 5 g/100 g and packaged in 110 µm thick aluminum pouch. The shelf life of the product was shortened two to three fold at 35 °C in comparison to storage at 25 °C. © Association of Food Scientists & Technologists (India) 2019.The oleic acid composition of almonds oils expressed by cold press varied from 73.56% in Cristomorto cultivar to 76.59% in Tuono while oleic acid in oils extracted by soxhlet method ranged from 71.86% in Cristomorto and 75.63% in Tuono cultivars. Also, oil from cold press extraction contained 19.51% and 21.86% linoleic acid for Ferragnes and Tuono almond cultivars, respectively, while 18.74 and 20.51% linoleic acid was recorded in Soxhlet extracted oil from Ferragnes and Tuono almonds, respectively. In addition, α-tocopherol contents of the oil samples varied significantly (p  less then  0.05) from 14.18 to 16.86 mg/100 g in Tuono and 15.71-17.96 mg/100 g in Ferragnes for cold-press and soxhlet extracted oils, respectively. β-Sitosterol composition of the oil obtained by cold press ranged from 157.94 (Tuono) and 171.68 mg/100 g (Cristomorto) while β-sitosterol content varied from 148.91 (Tuono) and 159.68 mg/100 g (Cristomorto) for oil extracted by Soxhlet method. © Association of Food Scientists & Technologists (India) 2019.Particle size is an important quality parameter of pharmaceutical and processed food products. The present study aimed at evaluating the effect of powder fractionation on the functional, physicochemical properties and antioxidant activity of cladode powder with particle size ranging from less then  45 to 500 µm. Granulometric study presented bimodal granules' volume distribution explaining the irregular shape of particles. The results indicated that functional properties were significantly (p  less then  0.05) affected by particle size distribution and the critical fraction size was 63-80 µm. In this study, a charcoal fired plantain roasting equipment was designed and developed and performance testing carried out. A roaster oven with the capacity of 20 plantain fingers per batch was constructed. Experiments were conducted on the constructed system and results obtained indicated that averages of 2.42 kg of 20 plantain fingers were roasted in 21.16 min using an average of 0.61 kg of charcoal. The percentage reduction of PAHs in the plantain roasted from the roasting equipment is 99.7% in comparison with direct roasting while the percentage reduction in roasting time in the equipment is averagely 47.45% in comparison with previous similar works. In this study, 28 different plants (fennel, linden, roots, chamomile, green tea, thyme, sage, rosemary, rosehip, ginger, balm, echinacea, blue tea etc.) used as herbal tea bags and leaves/flowers. Different types of herbal tea were prepared keeping boiling water in contact for ten min with herbal teas and were digested with HNO3 and H2O2 in a microwave oven. In these samples, trace element concentrations (As, Ba, Cd, Co, Cu, Cr, Ni, Pb, Se, V, Zn) were determined by Inductively Coupled Plasma Mass Spectrometry. The analytical performances were assessed as linearity, the limit of detection, limit of quantification, specificity/selectivity and recovery (%). The recovery values changed between 88 and 112%. © Association of Food Scientists & Technologists (India) 2019.D-lactic acid (DLA) serves as a key monomer enhancing both the mechanical and thermal properties of Poly(lactic) acid films and coatings, extensively used in the food packaging industry. Economically viable production of optically pure DLA by Lactobacillus delbrueckii NBRC3202 was achieved using a low-cost carbon source, Kodo millet bran residue hydrolysate (KMBRH) and nitrogen source (casein enzyme hydrolysate (CEH) resulting in a high DLA yield of 0.99 g g-1 and KMBRH conversion to final product (95.3%). The optimum values for kinetic parameters viz., specific growth rate (0.11 h-1), yield coefficient of biomass on KMBRH (0.10 g g-1) and DLA productivity (0.45 g L-1 h-1) were achieved at 5 g L-1 of CEH dosage under controlled pH environment. A comparative study and kinetic analysis of different neutralizing agents (NaOH, NH3, CaCO3 and NaHCO3) under pH controlled environment for KMBRH based DLA production was addressed effectively through bioreactor scale experiments.
